Ingredients
15 oz. can of tomato sauce
15 oz. can of diced tomatoes
1 lb. ground turkey
15 oz. can of kidney beans
15 oz. can of garbonzo beans
1/2 yellow onion, chopped
2 medium zucchini, chopped
1 cup carrots, chopped
2 cloves of garlic, chopped
3 Tbsp. chili powder
2 tsp. cumin
3 tsp. oregano
2 tsp. paprika
salt and pepper, to taste
Preparation
In a large pot, heat olive oil over medium heat.
Add onion, garlic, zucchini, and ground turkey. Cook until turkey is browned.
Dump both cans of beans into a strainer and rinse.
Add beans, tomato sauce, diced tomatoes with juice, carrots, and seasonings.
Reduce heat, and let simmer for about 30 minutes.
Add additional seasonings to taste.
